Old Friends


It is always lovely to connect with friends whether new ones or ones you have had for years. Today was a very special day because a friend and her daughter came over who I knew since I was fifteen!! What a blessing it was since she has never been to my house before.

She moved to Hawaii from the state I live in now back when she was in her early twenties. I lived in Hawaii then while my father was a pastor of a church. I was blessed to stay in her home two years ago when I went back after many years. Another blessing!!

Having a friend over when you live a ways from everyone is a real treat. It is good to have some food to share while you visit. As I lay in bed last night I thought over what I had in the house and came up with scones. So that is what I made this morning and popped them in the oven, just before they arrived.

Scones:

3 cups flour
2 Tablespoon sugar
1/2 tsp salt
2 teaspoon baking powder
1/4 cup (plus just a tad more) milk
2 eggs
1/4 butter softened (or Crisco)

Mix ingredients. Roll out and sprinkle with sugar. Cut into small squares. Put a spoonful of your favorite preserves into the center of square. Fold each square in a triangle. Bake for 15 minutes at 450 degrees.

  5. Yesterday I had LOTS of blond moments. I had to correct the recipe because I put down baking SODA instead of baking POWDER!!! My husband liked the scones the other day...and asked me to make him some for breakfast...AND thankfully I saw my mistake!!
