Here is a tried and true cake recipe if you want to make one from scratch. I have made this cake for over 20 years. It has a nice texture and the cream cheese in the frosting is deliciously sweet!!
I am not an expert, just a novice cake maker. If you want an expert, Esther over at Our Simple Country Life is where to look. I flub a cake just as often as it turns out. Sigh!! I just don't 'get it' and keep making cakes over and over again. This cake was delicious but my frosting job often has much to be desired. Those black crumbs on top are Oreos that survived all in my household who discovered the package had been opened. Everyone LOVES to snag an Oreo or dip their fingers into the frosting!! Yummy!!
1/2 cup butter
1/2 cup oil
2 cups sugar
5 eggs, separate out yolks
1 teaspoon soda
2 1/4 cups flour
1 cup buttermilk
1 tablespoon vanilla
1 cup coconut
1 cup nuts, chopped
FROSTING:
8 oz. pkg. cream cheese
1/2 cup butter
1 teaspoon vanilla
1 lb. box/4 cups powdered sugar
Cream butter, add oil and sugar and beat until smooth. Add yolks and beat well. Add flour mixed with soda. Add buttermilk, vanilla, coconut and nuts. Beat egg whites stiff, then fold into above mixture. Bake in 2-8" greased and floured pans at 350 until toothpick comes out clean (about 45-50 minutes.) Mix frosting ingredients until smooth. Frost on cake when cooled (WHEN COOLED!!)
